These Cucumber and Tomato Sandwiches are some of the simplest sandwiches you can make.
With the refreshing taste of the cool crisp cucumber and the flavorful juicy tomato it makes for a perfect meal on a hot summer day.
Do you have to make these sandwich with both cucumbers and tomatoes? NO.
There are few ways we make these summer sandwiches.
One is just as a cucumber sandwich, which is made the same way but with out the tomato.
Another way is a tomato sandwich, which is made the same, but with out the cucumber.
The last is with both the cucumber and the tomato.
Either way you make these sandwiches, they are a perfect and cool compliment to a hot summer day.
Ingredients needed for this sandwich
- Bread – Any bread of your choice will work with this easy sandwich. White, wheat, artisan, gluten free, naan or even a tortilla.
- Cucumber – Any variety of cucumber will work for this sandwich. You can peel the cucumber or just slice and add to the sandwich without peeling.
- Tomato – Any variety of tomato will work for this sandwich. I have even used cherry tomatoes cut in half on this sandwich.
- Mayonnaise – You can use your favorite vegan or regular mayo for this sandwich. You can also replace the mayo and just use a margarine or butter.
- Margarine – I like to add a vegan margarine to these sandwiches. Right after I toast the bread, I butter the bread and let it melt into the slices before adding the mayo. It adds to the flavor, but I don’t know how to explain the flavor. Just give it a try yourself, you will notice the difference.
The assembly of the Cucumber and Tomato Sandwiches
Toast your bread.
Right after toasting the bread, while it is still hot, smear both slices with your favorite margarine.
You will want the margarine to melt in before adding the mayo.
After the margarine has melted, spread the mayo of your choice onto both slices of toast.
Cut up the cucumber into thin planks.
Slice the fresh tomato into thin slices.
Assemble the sandwich with the thin sliced cucumbers and tomatoes over the mayo onto the one slice of toast.
Place the other slice of toast on top of the vegetables.
Cut the sandwich in half.
Enjoy your refreshing cucumber and tomato sandwich with a tall glass of ice tea and a side of chips.

- 1 Cucumber
- 1 Medium Tomato
- Mayo of your choice
- Margarine or Butter

To assemble the sandwich
- Toast your bread.
