You will love the flavor and the texture of this salad, it’s crispiness from the celery to the mild creamy texture and flavor of the chickpea.
The Main ingredient in this healthy salad is the chickpea or garbanzo bean.
Because they are full of many beneficial vitamins, minerals, protein, and fiber this makes them perfect to use in a salad.
For vegans, chickpeas can be a excellent replacement for protein, but you do not have to be a vegan to enjoy these wonderful tasting legumes.
Chickpeas are one of the most versatile, inexpensive and easy to find legume in the stores today.
The taste of a chickpea is a nutty flavor with a earthy touch. Personally I don’t think they taste like other beans, but some compare them to a cannellini or pinto bean.

This salad can be served as a sandwich spread or as a salad on a bed of lettuce.
Ingredients for a chickpea salad
- Chickpeas – A chickpea is the main ingredient in this salad. A slightly nutty and earthy flavor legume that pairs perfectly with just about everything.
- Mustard – In this salad I used a yellow mustard, I love the vinegary sour tanginess to this mustard.
- Vegan Mayonnaise – The mayo is the base of the salad.
- Celery – This mild yet earthy vegetable adds just the right amount of a refreshing crunch to this salad.
- Real Maple Syrup – Maple syrup is added to balance and mellow out the other flavors.
- Seasonings – Onion powder, minced garlic, dried dill, salt, and pepper are added for flavor.
How to make A Healthy Chickpea Salad
Drain and rinse the chickpeas, then add to a medium mixing bowl.
Clean and chop the celery and add to the bowl.
Add the mayo, mustard, maple syrup, and all the seasonings to the bowl.
Stir all the ingredients together until well combined.
Cover and store in the refrigerator until ready to serve.
How to serve a chickpea salad
On top of your favorite bread.
Scoop onto a large leaf of lettuce, serving as a salad.
Spread onto toast.

Try experimenting with different spices every time you make this salad.

A Healthy Chickpea Salad
Ingredients
- 1 Can Chickpeas
- 1 tsp Mustard I use the yellow mustard, pick your choice of mustard.
- 1/3 Cup Vegan Mayo Alternative
- 1/4 tsp Onion Powder
- 1/4 tsp Minced Garlic
- 1 Stalk Celery Chopped
- 1 tsp Real Maple Syrup Optional
- 1/2 tsp Dried Dill
- Salt and Pepper to taste.
Instructions
- Drain and rinse the chickpeas, then add to a medium mixing bowl.

- Add the mayo, mustard, maple syrup, and all the seasonings to the bowl.
