You are going to fall in love with this easy and delicious gluten free Vegan Peach Cobbler!
A classic summer dessert with the sweet taste of the peaches blended with the warming cinnamon and the soft cake like topping sprinkled on top.
It’s that time of year, peaches are in season and are abundant, so take advantage of this fruit!
After all who doesn’t love this soft, furry, sweet and tangy little round fruit!
Can’t get peaches?
You don’t have to use this recipe just for peaches, there is many different fruits or berries that would work just as well for a cobbler.
Why not try a variety of different fruits such as plums, nectarines, rhubarb, cherries, apples, or even pears.
Different berries that would work just as well, such as blueberries, strawberries, blackberries or raspberries.
Or try a mixed cobbler, add different fruits and berries of your choice, because there really is no limit to the wonderful combinations that you can create.
Ingredients for the cobbler
- Flour – I used a blend of gluten free flour and almond flour for this cobbler. The flour thickens the peaches and also adds structure to the crumble topping.
- Oats – Oats add more texture and support for the cobbler topping.
- Peaches – The filling of the cobbler. This can be switched to a different fruit, berry or a blend of both.
- Pure Vanilla Extract – Vanilla brings out the other flavors of the dessert as well as add just a hint of a vanilla flavor.
- Real Maple Syrup – The maple syrup adds the right amount of sweetness with a hint of caramel and vanilla to compliment the peaches.
- Cinnamon – Cinnamon adds a warming flavor and compliments the peaches.
- Salt – The salt enhances the flavors in this dessert and making the cinnamon more fragrant.
- Oil – In this recipe I used the mildly flavored avocado oil.
How to make this Vegan Peach Cobbler
Preheat the oven to 375° F.
Prepare a 8×8 glass baking dish with oil, set aside.
Clean and slice the peaches and add to a medium sized mixing bowl.
Next add 2 Tbsp gluten free flour, vanilla, 1/4 cup maple syrup and 1/2 tsp cinnamon to the sliced peaches.
Stir to cover everything well, pour into the baking dish and spread out evenly, then set aside.
For the crumble topping, add the flours, oats, maple syrup, cinnamon, salt and oil to the medium sized bowl and stir until well combined.
Sprinkle the crumble topping evenly over all the peaches.
Place into the oven for 40 to 50 minutes, until the peaches bubble on the sides and the crumble topping is slightly browned.
Once done remove from the oven and let cool or serve immediately with a dollop of homemade whipped cream or a scoop of vanilla ice cream or vegan ice cream.

- 4 Cups Sliced Peaches
