Vegan Peach Cobbler

Ingredients
  

Peach Filling

  • 4 Cups Sliced Peaches
  • 2 Tbsp Gluten Free Flour
  • 1 tsp Pure Vanilla Extract
  • 1/2 tsp Ground Cinnamon
  • 1/4 Cup Real Maple Syrup

Crumble Topping

  • 1/2 Cup Gluten Free Flour
  • 1/2 Cup Almond flour
  • 1/2 Cup Oats
  • 1/4 Cup Real Maple Syrup
  • 1/4 tsp Ground Cinnamon
  • 1/4 tsp Salt
  • 1/4 Cup Avocado Oil

Instructions
 

  • Preheat the oven to 375° F.
  • Prepare a 8x8 glass baking dish with oil, set aside.
  • Clean and slice the peaches and add to a medium sized mixing bowl.
  • Next add 2 Tbsp gluten free flour, vanilla, 1/4 cup maple syrup and 1/2 tsp cinnamon to the sliced peaches.
  • Stir to cover everything well, pour into the baking dish and spread out evenly, then set aside.
  • For the crumble topping, add the flours, oats, maple syrup, cinnamon, salt and oil to the medium sized bowl and stir until well combined.
  • Sprinkle the crumble topping evenly over all the peaches.
  • Place into the oven for 40 to 50 minutes, until the peaches bubble on the sides and the crumble topping is slightly browned.
  • Once done remove from the oven and let cool or serve immediately with a dollop of homemade whipped cream or a scoop of vanilla ice cream or vegan ice cream.
