Vegan Peach Cobbler

A classic summer dessert with the sweet taste of the peaches blended with a warming cinnamon and the soft cake like topping sprinkled on top.

Ingredients
  

Peach Filling
  • 4 Cups Sliced Peaches
  • 2 Tbsp Gluten Free Flour
  • 1 tsp Pure Vanilla Extract
  • 1/2 tsp Ground Cinnamon
  • 1/4 Cup Real Maple Syrup
Crumble Topping
  • 1/2 Cup Gluten Free Flour
  • 1/2 Cup Almond flour
  • 1/2 Cup Oats
  • 1/4 Cup Real Maple Syrup
  • 1/4 tsp Ground Cinnamon
  • 1/4 tsp Salt
  • 1/4 Cup Avocado Oil

Equipment

  • 1 8x8 Glass Baking Dish

Method
 

  1. Preheat the oven to 375° F.
  2. Prepare a 8x8 glass baking dish with oil, set aside.
  3. Clean and slice the peaches and add to a medium sized mixing bowl.
  4. Next add 2 Tbsp gluten free flour, vanilla, 1/4 cup maple syrup and 1/2 tsp cinnamon to the sliced peaches.
  5. Stir to cover everything well, pour into the baking dish and spread out evenly, then set aside.
  6. For the crumble topping, add the flours, oats, maple syrup, cinnamon, salt and oil to the medium sized bowl and stir until well combined.
  7. Sprinkle the crumble topping evenly over all the peaches.
  8. Place into the oven for 40 to 50 minutes, until the peaches bubble on the sides and the crumble topping is slightly browned.
  9. Once done remove from the oven and let cool or serve immediately with a dollop of homemade whipped cream or a scoop of vanilla ice cream or vegan ice cream.
