Method
- Preheat the oven to 375° F.
- Prepare a 8x8 glass baking dish with oil, set aside.
- Clean and slice the peaches and add to a medium sized mixing bowl.
- Next add 2 Tbsp gluten free flour, vanilla, 1/4 cup maple syrup and 1/2 tsp cinnamon to the sliced peaches.
- Stir to cover everything well, pour into the baking dish and spread out evenly, then set aside.
- For the crumble topping, add the flours, oats, maple syrup, cinnamon, salt and oil to the medium sized bowl and stir until well combined.
- Sprinkle the crumble topping evenly over all the peaches.
- Place into the oven for 40 to 50 minutes, until the peaches bubble on the sides and the crumble topping is slightly browned.
- Once done remove from the oven and let cool or serve immediately with a dollop of homemade whipped cream or a scoop of vanilla ice cream or vegan ice cream.
