These Butter Bean Burritos are topped with baked cabbage and drizzled with my Homemade Sriracha Aioli.
After years of enjoying burritos, I decided to try something different.
I wanted to add a few different ingredients that I thought would be wonderful together.
And I was right! The pairing of the butter bean with a baked cabbage was the perfect combo!
The creamy texture and smooth buttery flavor of the butter beans make for a satisfying burrito filling.
Pairing it with the slightly crunchy baked cabbage and a drizzling of my homemade aioli makes this an irresistible and unique burrito.
Ingredients for the burritos
- Oil – I like to use either avocado or olive oil in this recipe. I used the oil to saute the vegetables for the filling.
- Onion – I used a sweet onion in the bean filling.
- Peppers – I used a sweet bell pepper in the filling. Add in different peppers for your taste.
- Garlic – I used minced garlic for both the filling and the baked cabbage.
- Butter Beans – Butter Beans are a great alternative in these burritos. The beans have a creamy texture with a rich light buttery flavor that pairs wonderfully as the burrito filling.
- Broth – I used a vegetable broth for the filling.
- Seasonings – I added smoked paprika and pepper.
- Burrito Shells – Use your favorite burrito shells or make a bowl with these burritos.
Ingredients for the baked cabbage
- Cabbage – I used a purple cabbage. Use any color cabbage for this recipe.
- Carrots – I added carrots to the baked cabbage for more texture and flavor.
- Oil – I like to use either avocado or olive oil in this recipe. I drizzled the oil over the cabbage before baking.
- Balsmatic Vinegar – This adds a slightly sweet and rich flavor to the baked cabbage.
- Seasonings – Salt, pepper, onion, and garlic powder.
How to make a Butter Bean Burrito
Preheat the oven to 450°.
Prepare a baking sheet with parchment paper, set aside.
Next clean and dice the onion and peppers.
In large saucepan, over medium high heat, add oil, onions, peppers, and saute until everything is tender, about 10 to 15 minutes.
Next, drain and rinse the butter beans.
Add the beans, broth, and seasoning to the sauteed vegetables.
Simmer everything until the liquid is absorbed, about 20 to 25 minutes.
While this is simmering, slice or shred the cabbage, chop the carrot into small pieces, and add to a medium sized mixing bowl.
Drizzle the cabbage with oil, balsmatic vinegar, and seasonings, mix until everything is coated.
Spread the cabbage and carrots out onto the lined baking sheet.
Place into the oven and bake for 15 minutes, stir and return to the oven to bake another 15 minutes or until the cabbage and carrots are soft.
Remove from the oven when the vegetables are soft.
Once everything is done, place the bean mixture onto a burrito shell, top with the baked cabbage, and drizzle a aioli or add a dollop of sour cream over everything.

Butter Bean Burritos
Ingredients
Burrito Filling
- 2 Tbsp Oil Olive or avocado oil.
- 1 Onion
- 1 Bell Pepper Any color pepper. Add more of your favorite peppers to the filling.
- 1 1/2 tsp Minced Garlic
- 1 tsp Smoked Paprika
- 2 15 oz. Cans Butter Beans
- 1 Cup Vegetable Broth
- Ground Pepper To taste.
Baked Cabbage
- 1 Small Head Cabbage Any color. I used purple cabbage.
- 1 Cup Carrots
- 1 tsp Balsmatic Vinegar
- 1 tsp Ground Onion
- 1 tsp Ground Garlic
- Salt and Pepper To taste.
