Equipment

  • 1 13 x 9 glass baking dish
  • 1 Free-standing mixer

Ingredients
  

  • 4 Tbsp Oil I use olive or avocado oil.
  • 4 Tbsp Margarine Use your favorite vegan margarine.
  • 1 Cup Brown Sugar
  • 7 oz Silken Soft Tofu 1/2 Block
  • 1 tsp Baking Soda
  • 1 tsp Pure Vanilla Extract
  • 2 Tbsp Hot Water
  • 2 1/2 Cups All Purpose White Flour
  • 1 Cup Chocolate Chips I used a semi sweet chocolate chip. Use your favorite chip.

Topping

  • 2 Tbsp Brown Sugar
  • 1 tsp Ground Cinnamon

Instructions
 

  • Drain the tofu and wrap the block into a linen towel, let this rest for about 10 minutes before cutting it in half.
  • Preheat the oven to 350°F.
  • Grease a 13 x 9 glass baking dish with margarine, set aside.
  • After the tofu has drained for 10 minutes, cut the block in half and add to a mixing bowl, along with oil, margarine, and sugars, blend together until creamy.
  • Slowly add the flour about a 1/2 cup at a time, then continue to add the remaining ingredients.
  • After the dough is well combined, add and stir in the chocolate chips.
  • Pour and spread the dough into the greased baking dish.
  • In a small bowl, mix the brown sugar and cinnamon together and sprinkle over the top of the brownies.
  • Place the dish into oven and bake for about 25 to 30 minutes.
  • Check the bars after 25 to 30 minutes by inserting a toothpick in the center of the bars, the toothpick should come out clean when it is done. (Baking times can vary.)
  • Remove from the oven to cool.
  • Once the brownies are cool, cut, and serve.
