Sweet Potato Lentil Sloppy Joes

A simply easy dish that uses simple ingredients, and is ready to enjoy in about 45 minutes.

Ingredients
  

  • 2 Cups Water This is to cook the lentils in.
  • 1 Cup Lentils Brown/Green lentils work the best.
  • 1 Fresh Onion You can also use powdered or minced onion.
  • 1 Tbsp Minced Garlic 3 fresh garlic cloves or garlic powder can be used.
  • 1 to 1 1/2 lbs. Sweet Potatoes or Yams This is about 2 to 3 cups of sweet potatoes.
  • 1 Tbsp Yellow Mustard Any variety of mustard will work.
  • 1 15oz. Can Diced Tomatoes
  • 1 Cup Tomato Sauce
  • 2 Tbsp Real Maple Syrup
  • 1 tsp Smoked Paprika
  • 1 tsp Sriracha
  • Salt and Pepper to taste.

Method
 

  1. Rinse and drain the lentils.
  2. Add water to a medium sized saucepan and pour in the rinsed lentils.
  3. Cook at a medium high heat, to a boil, turn heat down to a medium low and let simmer until tender.
  4. Once the lentils are done, remove from heat.
  5. While the lentils are cooking, add enough oil to cover the bottom of a 12 inch skillet.
  6. Clean and dice the onion and sweet potato into bite sized pieces, add to the oiled skillet.
  7. Add in the garlic and cook at a medium heat, stirring frequently until the sweet potatoes are tender.
  8. Once done, turn down to a low heat and season the potatoes with the smoked paprika, salt, pepper, and stir until well combined.
  9. Pour in the tomato sauce, diced tomatoes, mustard, sriracha, maple syrup, and continue to cook at a low heat.
  10. Next, drain any extra liquid from the cooked lentils before adding to the skillet of sweet potatoes.
  11. Stir until everything is combined, turn off the heat, and serve.
  12. Serve your Sloppy Joes on a bun with your favorite vegan cheese or top a bed of rice with sliced avocados.
  13. Enjoy!
