- Clean and dice the shallot.
- In a small skillet add the oil and shallot, heat until the onion has started to brown, remove from the heat.
- In a pint jar add all the other ingredients and the sauteed shallots.
- Shake until well combined.
- Store in the refrigerator until ready to use.

How to use this vinaigrette
Of course you can use this dressing for a leafy green salad, but there is so many other ways you can use this vinaigrette.
You can drizzle it on a pasta salad with beans.
Marinate tofu for a tangy flavored main dish.
Add this dressing on top of pasta with vegetables.
Make a bean salad and drizzle the dressing over the top.
It can also be used as a dip or sauce for fresh vegetables and a hot or cold entree.
