A simply easy to make pasta salad, the Vegan Mediterranean Pasta Salad.
This creamy pasta salad uses simple ingredients, is quick to make, and so delicious!
A satisfying mix of flavors from the fresh dill, salty olives, tangy pickled peppers, and crisp cucumbers.
I love to make this cold salad for those hot summer days, family holiday gatherings, or a potluck.
Just toss everything together and store it into the refrigerator until ready to serve.
You can also make this dish gluten free!
Switch out the pasta for your favorite gluten free pasta.
You and your family will fall in love with this easy cream vegan pasta salad.

Ingredients needed for the Vegan Mediterranean Pasta Salad
Salad
- Pasta – I used my favorite gluten free pasta for this salad. Use your favorite pasta.
- Tomatoes – Use a small tomato, such as a grape or cherry tomato, cut into bite sized pieces.
- Cucumber – A crisp and refreshing fruit that compliments any salad.
- Olives – I used the kalamata olive in this salad. It has a mild yet distinctive slight smoky and fruity flavor.
- Pepperoncinis – A mild chili pepper that has a tangy, mild spicy, and slightly sweet flavor.
Dressing
- Vegan Mayonnaise – Use your favorite plant based mayonnaise.
- Real Maple Syrup – The maple syrup adds a vanilla sweetness with a hint smokiness.
- Dill – I like to use fresh dill in this salad. Although I recommend using fresh dill, you can substitute this with a dried dill.
- Salt
How to make a Vegan Mediterranean Pasta Salad
Cook the pasta to the package directions.
Drain the pasta once done, and add to a large mixing or serving bowl.

Clean and dice the cucumber, add them to the cooked pasta, set aside.

Making the dressing for the pasta salad
Clean and tear up the fresh dill.
In a small bowl, add the vegan mayo, maple syrup, salt, and dill, stir until well combined.


Slice the olives and pepperonicinis into small bite sized pieces, and add to the large bowl of pasta.

Drizzle the dressing over the pasta and toss to combine.
Next add the small tomatoes to the salad and toss until everything is coated with the dressing.

Serve or place in refrigerator until ready to enjoy.


Vegan Mediterranean Pasta Salad
Ingredients
- 1 12 oz package Pasta of choice I used a gluten free pasta for my salad.
- 1 Medium to large Cucumber
- 1 Cup Tomatoes Use a small bite sized tomato, such as a grape or cherry tomato. If the tomatoes are to big, cut in half.
- 1/4 Cup Kalamata Olives Sliced.
- 1/4 Cup Pepperoncinis Sliced.
Dressing
- 3/4 Cup Vegan Mayonnaise
- 1 Tbsp Real Maple Syrup
- 1/2 tsp Salt
- 1/4 Cup Fresh Dill
