Method
- Cook the pasta to the package directions.
- Drain the pasta once done, and add to a large mixing or serving bowl.
- Clean and dice the cucumber, add them to the cooked pasta, set aside.
Making the dressing
- Clean and tear up the fresh dill.
- In a small bowl, add the vegan mayo, maple syrup, salt, and dill, stir until well combined.
- Slice the olives and pepperonicinis into small bite sized pieces, and add to the large bowl of pasta.
- Drizzle the dressing over the pasta and toss to combine.
- Next add the small tomatoes to the salad and toss until everything is coated with the dressing.
- Serve or place in refrigerator until ready to enjoy.
