This Vegan Cilantro Lime Aioli is a wonderful compliment to any Mexican style meal.
What is great about this recipe is that it is so simple, quick, and easy to whip together.
There is only 5 simple ingredients and will take about 5 to 10 minutes to make.
This recipe is entirely vegan and gluten free.
But what exactly is Aioli?
Aioli is basically a flavored mayo that is made of oil and garlic, although you will find some recipes that contain eggs, mustard, and many different seasonings.
What are some of the ways to enjoy your homemade aioli?
Try aioli with french fries as a dip, here are a few recipes to try: Baked Beet Fries, Smashed Potatoes, or the Homemade Potato Wedges.
Or add the aioli to your burritos or tacos, such as the Butter Bean Burritos or the Vegan Breakfast Burrito.
You can also use it as a sour cream substitute on a soup or dish, such as the Quinoa Sweet Potato Chili or the Vegan Mushroom Rice Dish.
It also can be spread on your sandwich, try it on the Vegan Breakfast Sandwich, the Vegan Black Bean Burgers, or the Cucumber and Tomato Sandwich.

Ingredients needed for the aioli
- Vegan Mayonnaise – Use your favorite vegan mayonnaise.
- Lime Juice – I used lime juice, this can be substituted with lemon juice.
- Cilantro – I like to use fresh cilantro, but if this is not available, you can use dried cilantro.
- Seasonings – Onion and garlic powder.
How to make the Vegan Cilantro Lime Aioli
In a medium sized mixing bowl, add the vegan mayo, lime juice, garlic, and onion powder and whisk together until blended.
If using fresh cilantro, finely chop, add to the mixing bowl, and fold into the mayo mixture.
But if using a dried cilantro, add with the other ingredients and blend.

Pour the mixture into a pint jar, cover and place into the refrigerator for 1 to 2 hours before using.
This way the spices will marinade into the aioli.
Ways to enjoy aioli

I love to use this aioli in a few different ways.
We use this aioli on anything that can be complimented with sour cream, such as burritos, tacos, baked potatoes, or any dish that I would normally add sour cream too.
It makes for a great dip for your fries, chips or crackers.
Also, it makes a great spread on any sandwich, hot or cold.

- 1 Pint Glass Jar
Ingredients
- 1 Cup Vegan Mayonnaise
- 1 Tbsp Lime Juice
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 Tbsp Dried or chopped Fresh Cilantro
Instructions
- In a medium sized mixing bowl, add the vegan mayo, lime juice, garlic, and onion powder and whisk together until blended.
