Vegan Cilantro Lime Aioli

This Vegan Cilantro Lime Aioli is a wonderful compliment for any mexican style meal.

What is great about this recipe is that it is just so quick and easy to whip together, with only 5 simple ingredients.

And this recipe is entirely vegan and gluten free.

Here is a little information on what aioli is….

Aioli is basically a flavored mayo that is made of oil and garlic, although you will find some recipes that contain eggs, lemon juice, and even mustard. Mine does not contain any of these three ingredients, however.

So instead of the lemon juice, I added lime juice.

Ingredients

1 Cup Mayo Alternative

1 Tbsp Lime Juice

1 tsp Garlic Powder

1 tsp Onion Powder

1 Tbsp Dried Cilantro or chopped Fresh Cilantro

Instructions

In a medium sized mixing bowl, add the mayo alternative, lime juice, garlic, and onion powder and whisk together until blended.

If using fresh cilantro, finely chop and add to the mixing bowl and fold into the mayo mixture.

But if using a dried cilantro, just add with the other ingredients and blend.

Pour the mixture into a pint jar, cover and place into the refrigerator for 1 to 2 hours before using.

This way the spices will marinade into the aioli.

Ways to enjoy aioli

I love to use this aioli in a few different ways.

We use this aioli on anything that can be complimented with sour cream, such as burritos, tacos, baked potatoes, or any dish that I would normally add sour cream too.

It makes for a great dip for your fries, chips or crackers.

Also, it makes a great spread on any sandwich, hot or cold.

So if you are always using mayo on anything you eat, why not give aioli a try, you might be pleasantly surprised!
