If you love french toast you will fall in love this Vegan Apple French Toast Casserole!

This french toast bake is the perfect weekend breakfast or great for a brunch, a real crowd pleaser for vegan and non-vegan company during the holidays or any time of year.

In this recipe I sauteed the apples and made a crispy topping with a little oats, sugar, and margarine for a little something extra on the top of the bake.

I also made a vegan custard that holds the casserole together and, to my surprise, it taste just like an egg custard.

You will fall in love this simple dish, it is sweet, creamy, and simply delicious.

Don’t have time to whip this up in the morning?

No worries, make this dish up night before, toss it in the oven the next morning, and breakfast will be ready in an hour.

Ingredients needed for this french toast bake

  • Bread – I used french bread for this recipe. I like the crispier crust, it is a dryer bread, and there is no sugar in the bread (Trust me, there is enough sugar in the bake).
  • Plant Based Milk – I use the creamy and thick coconut milk for this recipe.
  • Arrowroot – This is a starch for thickening the custard. Don’t have arrowroot? Substitute with cornstarch.
  • Flax Seed – I used ground flax seed as the egg substitute for the recipe.
  • Sugar – I used brown sugar in the bake for a sweetener.
  • Salt – The salt enhances all the flavors in the bake.
  • Cinnamon – Cinnamon adds a warm earthy flavor with a hint of a spicy taste.
  • Pure Vanilla Extract – The vanilla extract adds notes of a woody, creamy, and buttery vanilla flavor, that compliments the other ingredients in the bake.
  • Apples – I used a gala apple for the bake. Choose your favorite apple.
  • Margarine – A vegan margarine is used to saute the apples before adding to the bake, plus it is used in the crumble topping, and to grease the baking dish.
  • Flour – Almond flour is used in the crumble topping.
  • Oats – Oats are added to the crumble topping. This can be a quick, thick, or regular oat.

How to make a Vegan Apple French Toast Casserole

Grease a 9 x 13 glass baking dish with a vegan margarine, set aside.

Tear or cut up a loaf of french bread into small chunks and place into the greased baking dish.

In a medium sized mixing bowl blend together the coconut milk, arrowroot, flax seed, brown sugar, salt, cinnamon, and vanilla, set aside to thicken for 10 minutes.

After 10 minutes, pour the coconut milk mixture over bread, mix together to cover all the bread pieces.

Set the baking dish aside for 30 minutes or let it set over night in the refrigerator.

Preheat the oven to 375° F.

In a small skillet, on a medium heat, add and melt the vegan margarine.

Peel and cut up the apples into small bite size pieces, add to the skillet and saute.

Add the brown sugar and cinnamon, stir while heating about 5 minutes or until the apples are slightly soft.

Pour the apple mixture on top of the bake.

Next, in a small mixing bowl, mix together the vegan margarine, brown sugar, almond flour, cinnamon, and oats.

Sprinkle the topping over the bake.

Place into the oven and bake for 40 to 50 minutes or until the top has slightly browned.

Remove from the oven, let the bake set for about 10 minutes before cutting.

Continue by serving this bake with a dollop of whipped topping (try my Whipped Coconut Cream) and real maple syrup or drizzle with a homemade fruit syrup or butter, such as my Pear Apple Butter or my Spiced Pumpkin Butter.

Ingredients
  

Bake

  • 1 lb. French Bread
  • 2 1/2 Cup Plant Based Milk I used coconut milk in this recipe.
  • 2 Tbsp Arrowroot
  • 2 Tbsp Ground Flax seed
  • 2 tsp Ground Cinnamon
  • 1/4 tsp Salt
  • 1/4 Cup Brown Sugar
  • 2 tsp Pure Vanilla Extract
  • Vegan Margarine This is used to grease the baking dish.

Apples

  • 3 Apples I used the gala apple, use your favorite apple.
  • 2 Tbsp Vegan Margarine
  • 1/4 tsp Cinnamon
  • 1/4 Cup Brown Sugar

Crumble

  • 1/2 Cup Almond Flour
  • 1/2 Cup Oats
  • 1/4 Cup Brown Sugar
  • 1/2 tsp Cinnamon
  • 3 Tbsp Vegan Margarine

Instructions
