This Pineapple Watermelon Salsa is a refreshing healthy dip or side dish.
It is so simple to make, and such a sweet, crisp, and cooling treat which makes it perfect for those hot summer days.
A dip that is dairy free, gluten free and plant based, not to mention it only needs 7 simple ingredients!
With this recipe I sauteed the onion and fresh peppers together, this helps to sweeten the salsa even more.
In this salsa you will also find fresh watermelon, pineapple and cilantro.
And I know not everyone likes cilantro, but I love to add just a little, this adds to the flavor.
If you are looking for a cilantro replacement, fresh mint or a basil will also work.
Personally, I like the flavor the cilantro adds to the salsa, and I am not a huge fan of cilantro, but it does add the perfect flavor.
Ingredients needed for this salsa
- Seedless Watermelon – A summer time favorite refreshingly sweet fruit.
- Pineapple – The pineapple is a tart but sweet flavor, it pairs perfectly with the watermelon.
- Sweet Pepper – Any variety of a sweet pepper will work in this salsa. You can also add a blend of sweet with a hot pepper for a little something different.
- Onion – In this salsa I used a shallot. I love the delicate and sweet flavor of this onion. And when the shallot is sauteed it adds just a hint of a onion flavor, which doesn’t take over the salsa.
- Cilantro – Cilantro adds a fresh citrus taste to the salsa. Don’t like cilantro, try your favorite fresh mint or a basil.
- Salt – The salt enhances all the flavors along with upping the sweetness to the salsa.
- Balsamic Vinegar – Balsamic Vinegar has a rich, complex sweetness with a tart aftertaste. This pairs perfectly with the super sweet fruits and vegetables in this salsa.
- Oil – I used a avocado oil to saute the shallot and pepper.
How to make this Pineapple Watermelon Salsa
Dice the watermelon and pineapple into small (about 1/4 inch) pieces and place into a medium sized serving bowl.
Clean and dice the shallot and pepper, place into a small skillet with a little oil.
Saute for about 5 to 10 minutes or until everything starts to soften and caramelize, then remove from heat to cool.
Mince the fresh cilantro leaves and add to the watermelon.
Once the shallot and pepper have cooled, add to the watermelon and stir.
Next sprinkle in the salt and pour the balsamic vinegar over the fruit and stir.
Cover the dish and place into the refrigerator for up to an hour before serving.
Enjoy with your favorite chips, scoop onto any dish or enjoy as a side dish.
Pineapple Watermelon Salsa
Ingredients
- 3 Cups Seedless Watermelon
- 2 Cups Fresh Pineapple
- 1/4 Cup Fresh Cilantro Don't like cilantro? Replace it with your favorite mint or basil.
- 1 Sweet Pepper This can be any variety of sweet pepper.
- 1/4 Cup Shallot
- 1/2 tsp Salt
- 2 Tbsp Balsamic Vinegar
- Oil Needed to saute the shallot and pepper.
Instructions
- Dice the watermelon and pineapple into small (about 1/4 inch) pieces and place into a medium sized serving bowl.
