Method
- Dice the watermelon and pineapple into small (about 1/4 inch) pieces and place into a medium sized serving bowl.
- Clean and dice the shallot and pepper, place into a small skillet with a little oil.
- Saute for about 5 to 10 minutes or until everything starts to soften and caramelize, then remove from heat to cool.
- Mince the fresh cilantro leaves and add to the watermelon.
- Once the shallot and pepper have cooled, add to the watermelon and stir.
- Next sprinkle in the salt and pour the balsamic vinegar over the fruit and stir.
- Cover the dish and place into the refrigerator for up to an hour before serving.
- Enjoy with your favorite chips, scoop onto any dish or enjoy as a side dish.
Notes
Make sure to use this salsa up with in 2 days for the best taste.
