Pineapple Watermelon Salsa

Ingredients
  

  • 3 Cups Seedless Watermelon
  • 2 Cups Fresh Pineapple
  • 1/4 Cup Fresh Cilantro Don't like cilantro? Replace it with your favorite mint or basil.
  • 1 Sweet Pepper This can be any variety of sweet pepper.
  • 1/4 Cup Shallot
  • 1/2 tsp Salt
  • 2 Tbsp Balsamic Vinegar
  • Oil Needed to saute the shallot and pepper.

Instructions
 

  • Dice the watermelon and pineapple into small (about 1/4 inch) pieces and place into a medium sized serving bowl.
  • Clean and dice the shallot and pepper, place into a small skillet with a little oil.
  • Saute for about 5 to 10 minutes or until everything starts to soften and caramelize, then remove from heat to cool.
  • Mince the fresh cilantro leaves and add to the watermelon.
  • Once the shallot and pepper have cooled, add to the watermelon and stir.
  • Next sprinkle in the salt and pour the balsamic vinegar over the fruit and stir.
  • Cover the dish and place into the refrigerator for up to an hour before serving.
  • Enjoy with your favorite chips, scoop onto any dish or enjoy as a side dish.

Notes

Make sure to use this salsa up with in 2 days for the best taste.
