Here are a few of my all time favorite desserts with this combo:
The Chocolate Peanut Butter Dessert
Layered with chocolate and peanut butter, place into your freezer to set, then cut to serve.
Vegan Magic in the Middle Cookies
This cookie is similar to classic peanut butter cup, but taste so much better, with the peanut butter filling wrapped in a crisp dark chocolate cookie.
Make a batch of these bars and wrap them up to freeze for a quick meal.
Ingredients for the truffles
- Peanuts – Dry roasted, unsalted peanuts are used to add texture.
- Peanut Butter – In this recipe I used a smooth peanut butter, but a chunky peanut butter will give more texture to the truffles.
- Real Maple Syrup – I used maple syrup as the sweetener for the truffles adding a touch of vanilla and caramel flavors.
- Chocolate – In this recipe I used a semi sweet chocolate chip melted to cover the truffles. Choose your favorite chocolate bar or chocolate chip to cover these treats.
- Dates – The dates add more sweetness and keep everything together to form a ball.
Optional
- Coarse Salt – A coarse salt can be added on top of the truffle. This helps to enhance the chocolate and adds a saltiness to the sweetness.
How to make Peanut Butter Truffles
Add peanuts, peanut butter, maple syrup, salt and dates into a blender or food processor and blend until all is chopped and combined.
Prepare a baking sheet with parchment paper.
Scoop out 1 tablespoon of the mixture and form into a 1 inch ball, place onto the parchment paper. Continue until all the mixture is formed into balls.
In a small bowl add together the chocolate chips with a tablespoon of peanut butter.
Melt in the microwave at 30 to 35 second intervals, stir after each 30 seconds until smooth.
Once the chocolate is smooth, roll each peanut butter ball into the chocolate until covered and place back onto the parchment paper.
Optional: Sprinkle coarse salt over the chocolate covered truffles before placing into the refrigerator.
Place the truffles into the refrigerator for about 1 hour or until the chocolate has set.
Once the chocolate has set, place truffles into a air tight container and store in the refrigerator or freeze.
