A Winter Citrus Salad that is bright, colorful and simply delicious.

It’s packed with flavor and Vitamin C, making it the perfect salad for the winter season!

The simple vinaigrette compliments the in-season fruits.

One of my winter favorites, and it’s so easy to whip up in just 15 minutes!

You may ask, Can this salad be customized?

Yes, of course it can! Slice up a mixture of your favorite fresh citrus fruit, add in more greens of your choice, or different herbs, or nuts.

This is a salad that is fresh, bold, and packed with flavor, it’s stunning beauty will surely brighten those winter blues.

A Winter Citrus Salad

Ingredient needed for A Winter Citrus Salad

  • Citrus Fruits – Use any combination of citrus you prefer, Grapefruit, different varieties of oranges, Clementines, or Mandarins. With this recipe I used a red grapefruit and a navel orange.
  • Pomegranate Arils – Arils are the hundreds of edible seeds inside the pomegranate. These little shiny red crispy seeds are what give you that tart but sweet taste that compliment the citrus very well. These seeds can be optional.
  • Mint – This herb will garnish the salad beautifully and supply a refreshing flavor.
  • Juice – In the dressing I made a citrus juice. Lemon, lime and orange juice are blended in the dressing, but this can be switched to any flavor juice. Substitute with cranberry, pomegranate, or cherry juice.
  • Oil – In this recipe I used Avocado oil because of the mild flavor, but any oil of choice will work just as well.
  • Spices – Salt and pepper to taste.
  • Sweetener – Maple syrup was used to sweeten up the dressing, this is optional.

Preparing and assembling A Winter Citrus Salad

Making the citrus salad dressing

Make sure to prepare this dressing no less than 1/2 hour before serving this salad, this will give the dressing time to marinate.

Do not add this dressing until ready to serve this winter citrus salad.

In a mixing bowl, add the oil, salt, pepper, maple syrup, lemon juice, lime juice. and orange juice.

Blend well and set aside or place in a container with a lid.

Preparing the salad

Peel the grapefruit and oranges, try to remove as much of the pith as possible.

Slice the citrus fruit into wheels, and if you find any seeds remove and discard them.

Cut open the pomegranate, remove the arils and place them into a bowl.

Clean the fresh mint and remove the leaves from the stem.

Assembling this winter salad for serving

A Winter Citrus Salad

On a serving platter, arrange the sliced citrus fruit and then sprinkle the pomegranate arils (seeds) over the citrus fruit.

Garnish the salad with mint leaves.

Stir or shake the dressing and evenly drizzle over the salad.

Serve immediately.

Alternatives or additional toppings

  • Onion – Top your salad with a thinly sliced onion of your choice such as shallots, green onion, or a sweet onion.
  • Nuts – Slivered toasted almonds, walnuts, cashews, or pecans, candied or plain.
  • Greens – Add this citrus salad on a bed of lettuce or blend in fresh spinach, kale, or arugula.
  • Fresh Herbs – Basil, Rosemary, or Cilantro.
  • Fresh Fruits or Vegetables – Apples, Pears, Kiwi, Cucumbers, or Grapes.

  • 1 Pomegranate

Dressing/Vinaigrette

  • 3 Tbsp Avocado Oil
  • 2 Tbsp Orange Juice
  • 1 Lemon Freshly squeezed juice of a lemon.
  • 1 Lime Freshly squeezed juice of a lime.
  • 2 tsp Real Maple Syrup
  • Salt and Pepper to taste
