Making the citrus salad dressing
- Make sure to prepare this dressing no less than 1/2 hour before serving this salad, this will give the dressing time to marinate
- Do not add this dressing until ready to serve this winter citrus salad
- In a mixing bowl, add the oil, salt, pepper, maple syrup, lemon juice, lime juice. and orange juice
- Blend well and set aside or place in a container with a lid
Preparing the salad
- Peel the grapefruit and oranges, try to remove as much of the pith as possible.
- Slice the citrus fruit into wheels, and if you find any seeds remove and discard them
- Cut open the pomegranate, remove the arils and place them into a bowl
- Clean the fresh mint and remove the leaves from the stem
Assembling this winter salad for serving
- On a serving platter, arrange the sliced citrus fruit and then sprinkle the pomegranate arils (seeds) over the salad
- Garnish the salad with mint leaves
- Stir or shake the dressing and evenly drizzle over the fresh fruits
- Serve immediately
Notes
Alternatives or additional toppings
Onion - Top your salad with a thinly sliced onion of your choice such as shallots, green onion, or a sweet onion.
Nuts - Slivered toasted almonds, walnuts, cashews, or pecans, candied or plain.
Greens - Add this citrus salad on a bed of lettuce or blend in fresh spinach, kale, or arugula.
Fresh Herbs - Basil, Rosemary, or Cilantro.
Fresh Fruits or Vegetables - Apples, Pears, Kiwi, Cucumbers, or Grapes.
