An Easy Avocado Salsa that doesn’t have to be just a salsa!

This tangy and sweet salsa works great as a side salad, add it to a sandwich, burrito, your tacos, pasta and of course those crackers and chips!

And you can customize this salsa in so many different ways.

Why not try adding different fruits like strawberries, mango, blueberries or pineapple.

Another get addition would be beans, such as black beans. Try it different every time you make it!

A super simple salsa that is so delicious and flavorful that everyone will be asking for this recipe!

An Easy Avocado Salsa

Ingredients for this avocado salsa

  • Corn – In this salsa I used a frozen sweet corn, a canned corn would work too, but fresh sweet corn would even be better!
  • Olives – Black olives are used in this salsa, it is a milder and slightly salty flavor that does not over power anything.
  • Onion – A fresh onion works the best in this salsa, but I have also used the powdered onion. Onion adds the depth to this salsa.
  • Peppers – The bell pepper is my go to for this salsa. I love the mild and sweet flavor of this pepper. But you can customize your salsa by adding any variety of peppers, such as the banana, jalapeno, or habanero ( just to name a few) along with the sweet bell peppers for a different salsa.
  • Avocados – This fruit is the main ingredient for this salsa, and why not!! The creamy texture and mild buttery taste are perfect as a snack, a appetizer, or even added to a main dish. There really is no limit to the avocado!

Dressing ingredients

  • Garlic -Add the wonderful flavor of fresh or minced garlic to the dressing.
  • Oil – Any oil will work, but my personal favorites are olive or avocado oil. they both work well in this dressing,
  • Lemon Juice – This refreshing and light juice enhances and adds a tart or sour flavor to the dressing.
  • Vinegar – I love the slight apple sour taste that the apple cider vinegar adds to this dressing.
  • Seasoning – In this dressing, I used the savory and earthy Italian seasoning, and added just the right amount of salt and pepper to taste.

How to make An Easy Avocado Salsa

Cook the corn on the stove or in the Microwave. After the corn is done, drain extra water off the corn, set aside to cool.

If using canned corn, all that needs to be done is to drain the corn before adding to the large bowl.

Clean and dice the onion and pepper.

In a large bowl add the corn, pepper, and onion.

Drain and add sliced black olives to the bowl.

Cut up the avocados and add to your large serving bowl.

But if serving the next day, leave the avocado out until the day of serving the salsa.

In a smaller bowl , mix the garlic, lemon juice, oil, apple cider vinegar, and the seasonings together.

Pour the dressing over the ingredients in the large bowl.

Toss lightly to coat everything evenly.

Cover the bowl and place in the refrigerator for a few hours or over night to let the salsa marinate.

This easy avocado salsa will keep in the refrigerator up to 2 days.

After 2 days the avocado tends to get really mushy and starts to turn a not so appetizing brown.

Add this salsa to your favorite hot or cold pasta.

Try it as a condiment on your favorite sandwich.

Scoop the salsa on top of a bed of lettuce.

Ingredients
  

  • 1 Package frozen corn or 2 canned corn, drained.
  • 2 cans 2.25 oz. sliced black olives Drained.
  • 1 Red Bell Pepper Chopped
  • 1 small Onion Diced or 1 Tbsp. powdered onion.

Dressing

  • 1 tsp Minced Garlic
  • 1/3 Cup Oil Avocado or olive oil.
  • 1/4 Cup Lemon Juice
  • 3 Tbsp Apple Cider Vinegar
  • 1 tsp Italian Seasoning

  • 1/2 tsp Pepper

Add last

  • 3 Avocados Peeled, pitted and diced. Save Avocados until you are ready to serve.
