A old fashioned Macaroni and Tomatoes dinner that uses simple ingredients and is so easy to whip up for a fast meal.

You will also love that this dish can be made in just one Pot!

This is a old recipe that I remember my mother always making this for us.

She always served this with a piece of bread or toast smeared with creamy peanut butter.

Oh does that bring back memories, so of course this simple and nostalgic recipe makes it in my monthly menu.

But I do like to change up this recipe every time I make it, adding different vegetables and sometimes beans.

What vegetables to add?

  • Corn
  • Green Beans
  • Peas

What beans to add?

I love adding kidney beans most of the time, but I have added chick peas for a little something different.

What tomatoes to use?

Fresh and homemade stewed tomatoes is the best!

But I have used many varieties of canned stewed tomatoes if homemade is not available.

Can this dish be gluten free?

Yes! I make mine with a gluten free pasta.

Keep in mind gluten free or not, the pasta will start to fall apart after stirring.

But this dish still taste as good no matter what the pasta looks like or if you reheat this dish in the microwave.

Ingredients for this dish

  • Pasta – Choose your favorite pasta, I made this dish with a gluten free fusilli pasta. Any shape of pasta will work just as well, although some do hold up better in this dish than others.
  • Stewed Tomatoes – I used a homemade stewed tomato. But if you do not have a homemade stewed tomato, any canned stewed tomato will work.
  • Beans – I love to add beans to this dish, but it is not necessary. My favorite to add is kidney beans, but chick peas are also really good, or you can add both. Try the dish without or with beans and experiment with the different types of beans to find your favorite.
  • Vegetables – This is optional, but I love adding more vegetables. I have added a few different vegetables, such as peas, corn and green beans. My favorite is adding all of the vegetables to the dish to make it a one bowl easy meal.
  • Seasonings – Salt and pepper to taste. Optional spices I love to add is minced garlic and onion powder. But why not try different spices, each time you make this fast and easy dish.

How to make Macaroni and Tomatoes

Make your favorite pasta to the package direction, drain and put back into the pot.

If adding beans, drain, rinse and add to the pot with the pasta.

Adding vegetables? Drain and add to the pasta.

Add the seasonings of your choice.

Stir and cook over a medium heat to a boil.

Remove and serve hot.

How to serve this dish

Sprinkle shredded cheese over the pasta.

Add a dollop of sour cream.

Top the dish with a sprinkle of herbs.

Serve with your favorite bread of choice.

  • 1 Package Pasta
  • 1 16 oz. Stewed Tomatoes
  • 1 15 oz. can Kidney Beans or Chick Peas Optional
  • 1 15oz. can Vegetables, such as Peas, Corn, Green Beans Optional
  • 1 tsp Minced Garlic Optional
  • 1 tsp Powdered Onion Optional
  • Salt and Pepper to taste.

Instructions
 

  • Make your favorite pasta to the package direction, drain and put back into the pot.
