This Homemade Lemon Dill Aioli uses simple ingredients and takes only 5 minutes to make!

Making aioli at home is unbelievably easy, all you really need is an immersion blender.

And not only is this aioli vegan but gluten free too!

Some may consider aioli a flavored mayo, but I believe it is a category of it’s own and doesn’t have to be used for only one thing.

It can be a simple dip for those fresh crisp vegetables, great for dipping those chips, perfect for a sandwich spread, and it can make for a refreshing salad dressing.

What’s in this homemade lemon dill aioli?

  • Avocado Oil – I personally love avocado oil because it is mild with a smooth buttery taste. A very healthy fat with wonderful benefits. This oil is perfect for everything I have used it for, cooking, baking, salad dressings, and of course aioli.
  • Unsweetened Plain Almond Milk – This is my plant based milk alternative of choice. I love the creamy texture with the slight nutty flavor. So many new and different milk alternatives out there today, experiment with them and find your favorite!
  • Lemon Juice – This adds a nice tanginess to the aioli
  • Spices – In this aioli I added salt, onion, garlic and of course dill.
  • Real Maple syrup – I added maple syrup because I thought this aioli needed just a little sweetness, and I love the flavor of maple syrup.

How to make this flavorful aioli

The most important part of this recipe is that everything has to be at room temperature.

The reason why this is so important is that it allows the ingredients to combine and give the aioli it’s creamy consistency.

If you choose to not let these ingredients sit out to reach room temperature, you can warm them up in the microwave for 10 to 20 seconds.

Once all the ingredients are at room temperature you can combine them in a large measuring cup or a quart jar to blend.

You will need an immersion blender to blend the perfect aioli. You will only need to blend no more than a minute to get the consistency of a mayo.

After blending, cover and store in the refrigerator for about an hour before using.

The aioli will last about a week in the refrigerator.

Ways to serve this fresh homemade lemon dill aioli

Try this aioli on anything that you would add sour cream to, like chili, baked potatoes, burritos, or nachos.

Or as a spread on your favorite hot or cold sandwich.

It also makes for a great fresh vegetable dip, or as a dressing for a salad.

Notes

Sometimes this aioli doesn’t get creamy, or it becomes runny while storing. Do not throw it away, this will still work great for a salad dressing. Just keep it in the refrigerator and shake or stir before pouring it on to what ever you want.
