This Sweet Corn Salad can not only be enjoyed hot but it’s also just as good cold and it’s a dish for any time of year.
It is perfect for the holidays and a quick and easy side dish for a summer BBQ.

How to garnish this salad
- Add a few small grape tomatoes.
- Sprinkle on fresh herbs, such as: thyme, basil, sage, or even a mint.
- Slices of fresh avocado placed on top of the salad.
Ingredients needed for this salad
- Sweet Corn – If you can get the fresh corn on the cob for this salad, do it! But if that is not available, frozen corn will work just as well.
- Oil – In this recipe I used avocado oil because of it’s mild flavor with a hint of a buttery flavor.
- Sweet Bell Pepper – Any color of a sweet bell pepper will work perfectly in this salad.
- Sweet Onion – In this recipe I used the sweetest onion that I could find and that was the vidalia onion, but for a little color I would use the purple or red onion.
- Salt and Pepper – For flavor.
- Fresh Herbs – Your favorite fresh herbs topped as the garnish.
How to make this Sweet Corn Salad
If using fresh corn kernels from the cob, remove and clean off the husk, silk and cut the kernels off the cob, discard the cobs.
Clean and thinly slice the onion and bell pepper.
In a medium sized skillet, add oil, corn, onion, bell pepper and cook on a medium heat for about 10 minutes or until the vegetables are crisp but tender and slightly browned.
Sprinkle and stir in the salt and pepper to taste.
Remove from heat, add the fresh herbs of choice and serve hot or cold.

Ingredients
- 2 Cups Fresh Sweet Corn Or 1 10oz. bag of frozen corn.
- 2 Tbsp Avocado Oil
- 1/2 Cup Thinly Sliced Sweet Onion
- 1 Sweet Bell Pepper Orange, red or yellow bell pepper.
- Salt and Pepper to taste
- Fresh Herbs for garnish
