Method
- If using fresh corn kernels from the cob, remove and clean off the husk, silk and cut the kernels off the cob, discard the cobs.
- Clean and thinly slice the onion and bell pepper.
- In a medium sized skillet, add oil, corn, onion, bell pepper and cook on a medium heat for about 10 minutes or until the vegetables are crisp but tender and slightly browned.
- Sprinkle and stir in the salt and pepper to taste.
- Remove from heat, add the fresh herbs of choice and serve hot or cold.
