Sweet Corn Salad

A Sweet Corn Salad that is packed with flavor, simple to make, a perfect side dish, and ready in as little as 20 minutes!

Ingredients
  

  • 2 Cups Fresh Sweet Corn Or 1 10oz. bag of frozen corn.
  • 2 Tbsp Avocado Oil
  • 1/2 Cup Thinly Sliced Sweet Onion
  • 1 Sweet Bell Pepper Orange, red or yellow bell pepper.
  • Salt and Pepper to taste
  • Fresh Herbs for garnish

Method
 

  1. If using fresh corn kernels from the cob, remove and clean off the husk, silk and cut the kernels off the cob, discard the cobs.
  2. Clean and thinly slice the onion and bell pepper.
  3. In a medium sized skillet, add oil, corn, onion, bell pepper and cook on a medium heat for about 10 minutes or until the vegetables are crisp but tender and slightly browned.
  4. Sprinkle and stir in the salt and pepper to taste.
  5. Remove from heat, add the fresh herbs of choice and serve hot or cold.

What are some easy and delicious alternatives and garnish that will compliment this salad?
  • Switch out the bell peppers with a hot pepper to spice things up.
  • Add fresh sauteed garlic.
  • Dice up a few cucumbers.
  • Add a few small grape tomatoes.
  • Sprinkle on fresh herbs, such as: thyme, basil, sage, or even mint.
  • Place sliced fresh avocado on top of the salad.
