A Sweet Corn Salad that is packed with flavor, simple to make, a perfect side dish, and ready in as little as 20 minutes!

Ingredients
  

  • 2 Cups Fresh Sweet Corn Or 1 10oz. bag of frozen corn.
  • 2 Tbsp Avocado Oil
  • 1/2 Cup Thinly Sliced Sweet Onion
  • 1 Sweet Bell Pepper Orange, red or yellow bell pepper.
  • Salt and Pepper to taste
  • Fresh Herbs for garnish

Instructions
 

  • If using fresh corn kernels from the cob, remove and clean off the husk, silk and cut the kernels off the cob, discard the cobs.
  • Clean and thinly slice the onion and bell pepper.
  • In a medium sized skillet, add oil, corn, onion, bell pepper and cook on a medium heat for about 10 minutes or until the vegetables are crisp but tender and slightly browned.
  • Sprinkle and stir in the salt and pepper to taste.
  • Remove from heat, add the fresh herbs of choice and serve hot or cold.

What are some easy and delicious alternatives and garnish that will compliment this salad?
  • Switch out the bell peppers with a hot pepper to spice things up.
  • Add fresh sauteed garlic.
  • Dice up a few cucumbers.
  • Add a few small grape tomatoes.
  • Sprinkle on fresh herbs, such as: thyme, basil, sage, or even mint.
  • Place sliced fresh avocado on top of the salad.
