Vegan Shit on a Shingle

A Vegan version of Shit on a Shingle

Ingredients
  

Saute together, and set aside.
  • 1/2 tsp Minced Garlic
  • 1/4 Cup Green Onion Diced.
  • 1 Tub Mushrooms Any variety. Canned mushrooms can be used.
Mix together and heat in a sauce pan, till it thickens.
  • 1 Cup Water
  • 1 Tbsp Cornstarch
  • 4 Tbsp Flour
  • 1 tsp. Salt
  • 1 Cup Plant Based Milk I used a plain, unsweetened almond milk.
  • Pepper To taste
  • 2 Tbsp Vegan Margarine
  • 1 tsp Onion Powder
  • 1 Cup Vegetable broth
Stir in the vegetables
  • 1 Large Carrot Chopped and cooked
  • 1 1/2 cup Green Beans Cooked
  • 1 cup Peas Cooked. These can be on the side or in the recipe itself. Optional

Method
 

  1. Cook the carrots and green beans, set aside.
  2. Next saute the mushrooms, garlic, and onions in oil until they are soft and set aside.
  3. In a large measuring cup, blend together the water, milk, vegetable broth, salt, pepper, onion powder, and flour, set aside.
  4. On medium heat, in a medium sized sauce pan, melt the margarine.
  5. Next add the measuring cup of mixed ingredients to the margarine.
  6. Continue to heat and stir the mixture until it thickens.
  7. After it has thickened, stir in the cooked vegetables and sauteed mushrooms, remove from heat.
  8. Toast your bread, spread margarine on the toast.
  9. Plate the toast and scoop the gravy on top to serve.
