Vegan Rice Pilaf

This easy to make Vegan Rice Pilaf is full of flavor, gluten free, and a wonderful side or main dish.

Ingredients
  

  • 1 Cup Rice I used Basmati rice in my dish.
  • 1/2 Cup Uncooked pasta Vermicelli or orzo. If you can not find a gluten free version of these, use angel hair or spaghetti noodles broken into pieces.
  • 1/4 Cup Onion Use your favorite onion, I used a green onion in this dish.
  • 1 Clove Garlic Or use 1/4 tsp of garlic powder.
  • 2 Cups Vegetable Broth
  • 1/4 tsp Ground Pepper
  • 1/4 tsp Salt
  • 1/4 tsp Turmeric
  • 1/4 tsp Dried Thyme
  • Parsley Garnish, optional.

Method
 

  1. Rinse the rice and set aside to drain.
  2. Clean and dice the onion and garlic clove into small pieces, set aside.
  3. Add the oil to a large pot, heat at a medium high heat, next add the uncooked pasta, and saute for about 3 minutes.
  4. Next add the onion and garlic clove to the skillet.
  5. Then stir in the rinsed rice and continue to saute until slightly browned and translucent.
  6. Continue by adding the broth, turmeric, thyme, salt, and pepper, bring to a boil.
  7. Once everything comes to a boil, turn the heat down to low, cover, and simmer for about 15 to 18 minutes, or until the rice is done.
  8. Then remove from the heat while leaving the cover on for another 5 minutes.
  9. After 5 minutes, remove cover to fluff with a fork and serve.
