Vegan Mushroom Burritos

If you are a mushroom lover you will love these Vegan Mushroom Burritos.

Ingredients
  

  • 24 oz Tub Mushrooms I used baby bella mushrooms.
  • 2 Tbsp Liquid Aminos Can substitute with soy sauce.
  • 3 Tbsp Lime Juice Can substitute with lemon juice.
  • 1 tsp Salt
  • 1 tsp Ground Pepper
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • Oil I like to use avocado or olive oil to saute the vegetables and mushrooms.
Ingredients to assembling the burritos
  • Burrito Shells
  • Avocado Sliced or mashed.
  • Onion Optional, I used green onions.
  • Sriracha
  • Peppers Sweet or hot.
  • Leafy Greens
  • Vegan Sour Cream
  • Salsa

Method
 

  1. Clean and slice the fresh mushrooms.
  2. Place the sliced mushrooms in a glass dish with a lid.
  3. Measure and pour the liquid aminos and lime juice over the mushrooms.
  4. Sprinkle the seasonings over the mushrooms, stir, and cover.
  5. Place into the refrigerator for no less than 4 hours, overnight for best results.
  6. Continue with cleaning and slicing the onion and peppers.
  7. Next add oil to a large sized skillet along with the onion and peppers.
  8. Saute everything at a medium high heat until vegetables are caramelized.
  9. Once the vegetables have a light golden brown seared edge, remove from the heat.
  10. After the vegetables have cooled slightly, scoop them into a bowl, and set aside.
  11. Next remove the marinating mushrooms from the refrigerator and add to the hot skillet, along with any standing liquid.
  12. ( Add more oil to the skillet before adding the mushrooms, if needed. )
  13. Saute the mushrooms at a medium high heat until soft, not rubbery, or until all the internal liquid has evaporated.
  14. Make sure to continually stir as you cook the mushrooms.
  15. Once done, remove from heat.
Assembling the mushroom burritos
  1. Warm the burrito shell in the microwave for 10 to 20 seconds.
  2. Smear the mashed avocado onto the burrito shell, add a scoop of the mushrooms, then place a few of the sauteed onion and peppers on top.
  3. Next, add the salsa of your choice.
  4. Dollop the plant based sour cream or yogurt on top of the sauteed vegetables.
  5. Lastly place a fresh piece of lettuce on top, fold the burrito, and cut in half.
  6. Serve the burritos with a side of rice and enjoy!
