Vegan Lentil Sloppy Joes

Simple and budget friendly Vegan Lentil Sloppy Joes! Just put all the ingredients in a slower cooker and cook all day! It's that easy!!

Ingredients
  

Start by sauteing these ingredients, then add to slow cooker
  • 2 Tbsp Oil 1 Tbsp in the slow cooker and 1 Tbsp in a skillet. I have used olive or avocado oil, use your favorite oil.
  • 1 Large Onion Optional. Substitute with onion powder. Use as much as you prefer.
  • 1 Large Carrot
  • 1 Red or Green Bell Pepper
  • 1 Tbsp Minced Garlic Optional.
Add these ingredients to the slow cooker
  • 1 1 lb. Dried Lentils Green or brown are the best for this recipe.
  • 1/2 cup Ketchup
  • 2 cups Tomato sauce or any pasta sauce Or 15oz. can of tomato sauce.
  • 2 to 3 Tbsp Real Maple Syrup Optional.
  • 5 to 6 cups Water Start with 5 cups of water, add as needed while cooking.
  • 1 Tbsp Yellow Mustard Any variety of mustard can be added.
  • 1 tsp Smoked Paprika
  • Salt and Pepper To taste.
  • Pepper Flakes To taste, optional.
  • Tabasco Sauce To taste, optional.
  • Siracha To taste, optional.

Equipment

  • 1 Slow cooker

Method
 

  1. Clean and chop up the onion, carrots, and peppers.
  2. In a medium sized skillet, add and saute the onion, carrots, peppers, and garlic all in 1 Tbsp of olive oil until tender, once done add to the slow cooker.
  3. Rinse the lentils and add to slow cooker.
  4. Pour 5 cups of water over the lentils and vegetables.
  5. Add the remaining ingredients to the slow cooker.
  6. Set the temperature to high and watch through out the day.
  7. As the day goes on, stir and check to see if you need to turn down the temperature or add more liquid.
  8. Estimated time of cooking is 6 to 8 hours.
How to serve the Vegan Lentil Sloppy Joes
  1. Serve on a bun with mayo, cheese, and pickles.
  2. Or make it a sloppy joe bowl with rice or pasta, garnish with diced avocado, pickles, and aioli.
