Vegan Hobo Dinner

Customize your Hobo Dinner with all your favorite seasonal vegetables.

Ingredients
  

  • 3 lbs Potatoes Any potato you prefer. I love to use red or the new potatoes.
  • 4 to 6 Carrots Peeled and diced.
  • 1 Head Broccoli
  • 1 Large Onion Optional. Any variety of onion can be added.
  • 4 Cloves Garlic Optional.
  • 1 to 2 Peppers I like to use bell peppers in my dinner. Add your favorite peppers.
  • 2 tbsp Oil I like to use olive oil when making this in the oven. but if on a open fire, use butter or a vegan margarine.
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 450°F.
  2. Prepare a baking sheet with parchment paper, set aside.
  3. Clean, peel and cut up all the vegetables into bite size pieces.
  4. Place all the cut up vegetables evenly onto the parchment lined baking sheet.
  5. Drizzle the oil over the vegetables.
  6. Salt and Pepper to taste.
  7. Stir the vegetables to make sure all is covered with the oil and seasoning, cover with foil.
  8. Place into the oven and bake for 30 minutes, remove the foil and bake for another 15 to 20 minutes.
  9. Please note: baking times can vary.
  10. All the vegetables should be tender and and a slightly golden brown.
  11. Remove from the oven and serve as a main or side dish, with ketchup, mustard, and aioli.

Notes

A Great campfire meal!!
Add all your favorite vegetables together on top of a large sheet of foil, add a little vegan margarine, fold the foil to cover the vegetables completely, placing carefully into the fire. Check at about 20 to 30 minutes, and continue cooking until the carrots and potatoes are tender, unwrap and enjoy!
