Vegan Cornbread or Johnny Cake

This recipe is both a vegan and non vegan recipe. A simple cornbread that can be for breakfast or as a side to any meal.

Ingredients
  

  • 1 1/4 Cup Flour
  • 3/4 Cup Cornmeal
  • 1/4 Cup Sugar
  • 2 tsp Baking Powder
  • 1 Cup Unsweetened Almond Milk Or Regular Milk
  • 1/4 Cup Oil Olive or Avocado
  • 1/4 Cup Unsweetened Apple Sauce Or 1 Egg, or any other egg replacer of your choice.

Method
 

  1. Preheat the oven to 400°F.
  2. Next, grease a 8x9 glass baking dish, set aside.
  3. Combine and blend all the ingredients in a medium sized mixing bowl.
  4. Pour the batter into the greased 8x9 glass baking dish, and place into the oven.
  5. Bake for 20 to 30 minutes or until the cornbread is a golden brown.
  6. When checking to see if the cornbread is done, poke a toothpick in the center of the cake.
  7. If the toothpick comes out clean it is done, if not bake a little longer, checking every couple minutes.
  8. Please note that when making this as a vegan cornbread, it may take a bit more time to bake, so check often.
  9. Serve the Vegan Cornbread or Johnny Cake warm with fruit, jam, jelly, margarine, butter, and/or maple syrup.
