Vegan Chili Mac

This Vegan Chili Mac is simple to make, healthy, inexpensive, and a perfect way to use up that left over pasta.

Ingredients
  

  • 2 Tbsp Oil I like to use either olive or avocado oil, use your favorite oil.
  • 1 small onion Optional. Use your favorite variety of onion. Can also use about 1 Tbsp of onion powder.
  • 1 Cup Peppers of your choice I like to use a variety of colors of the sweet bell peppers.
  • 1 Tbsp Garlic Optional. Minced or powdered.
  • 24 oz. Fresh Mushrooms Any variety of mushroom can be used. Also the amount of mushrooms is your choice.
  • 15 oz. Black Beans
  • 15 oz. Kidney Beans
  • 14.5 oz. Diced Tomatoes
  • 1 Handful Tomatoes Optional. Any variety can be added.
  • 15 oz. Corn I used canned corn in my dish. If adding frozen or fresh corn add about 1 cup.
  • 1 1/2 Cup Pasta Sauce Any variety of pasta sauce.
  • 2 to 3 tsp Chili Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Red Pepper Flakes
  • 2 tsp Sriracha Optional or add more or less to your dish.
  • 1/8 Cup Black Olives
  • 1/8 Cup Green Olives
  • 1 Tbsp Green Olive Brine
  • 2 1/2 Cup Cooked Pasta

  • Vegan Sour Cream
  • Aioli
  • Avocado
  • Fresh Herbs

Method
 

  1. If you have no left over pasta, make the pasta of your choice to the package direction.
  2. Clean and slice the peppers, onion, and mushrooms.
  3. In a large stock pot on a medium high heat add oil, peppers, onion, garlic, and mushrooms.
  4. Saute the vegetables until the onions have slightly browned, about 10 minutes.
  5. Next, drain and rinse the black and kidney beans, add to the sauteed vegetables.
  6. If adding fresh tomatoes, cut into large chunks, then add to the stock pot.
  7. Continue by adding the corn and diced tomatoes.
  8. Pour in the pasta sauce and stir.
  9. Slice the olives and add to the pot.
  10. Sprinkle in the seasonings, add sriracha, and stir.
  11. Lastly add the cooked pasta.
  12. Bring everything to a boil, then turn the heat down to medium low and let everything simmer for about 10 to 15 minutes.
  13. After 10 to 15 minutes, remove from the heat.
  14. Serve the chili mac with a vegan sour cream, aioli, fresh herbs, and/or a little guacamole.
