Vegan Black Bean Burgers

Ingredients
  

  • 1/3 Cup Oatmeal Instant, quick, or old fashioned oats.
  • 1/2 Cup Water
  • 1 15 oz. Can Black Beans
  • 1/2 Cup Cooked Rice Any rice will work well, I used Basmati.
  • 2 Tbsp Tapioca Flour Or Corn Starch.
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Italian Seasoning
  • 1 tsp Onion Powder
  • 1/4 tsp Smoked Paprika
  • 1/8 tsp Cayenne Pepper
  • 1/8 tsp Red Pepper Flakes
  • Salt and Pepper To taste.

Oil for frying the patties.

  • 2 Tbsp Oil I use avocado oil.

Instructions
 

  • Preheat the oven to 350°F.
  • Prepare a baking sheet with parchment paper and set aside for the black beans.
  • Rinse and drain the black beans.
  • After the black beans have drained, place the beans onto a paper towel to dry off any extra water.
  • Once you have dried off the beans, place them onto the parchment lined baking sheet.
  • Place the beans into the oven and bake for about 10 to 12 minutes.
  • While the beans are baking, cook the oatmeal in water.
  • Once the oatmeal is done, remove from heat, and set aside to cool.
  • After 10 to 12 minutes, check on the beans, you will know they are done when the beans start to pop open.
  • Remove the beans from the oven and pour them into a medium sized mixing bowl.
  • Add the cooked oatmeal to the beans and mash everything together.
  • Next, add the spices, tapioca flour, rice, and mix by hand, forming everything into a ball.
  • Place the ball into the refrigerator for about 1/2 hour.
  • After the 1/2 hour, remove the ball from the fridge and cut it into quarters.
  • In a large skillet add the oil and heat at a medium high heat.
  • Next, form the quarters into nice round patties and place them into the warm oil.
  • Cook the patties for a few minutes, or until they start to brown, then flip the patties and continue cooking for a few more minutes.
  • Once the burgers have nicely browned, remove the patties from the skillet and place them onto a plate.
  • Serve these burger on top of your favorite bun with fresh avocado, aioli, and salsa.
  • ENJOY!

Notes

These burgers are also freezer friendly too!
After you fry them up, let them cool and throw them in a freezer friendly container and pop them into your freezer.
When you are ready to use your burger, toss them in the microwave for about a minute, flip and cook for another minute, or until completely warmed.
Note: Cook time can vary depending on the microwave.
