Sauteed Spinach and Chickpeas

This dish is so easy to make, use simple ingredients, full of flavor and a inexpensive dish. Make this dish as a main meal or as a side dish.

Ingredients
  

  • 10 oz. Fresh Spinach
  • 1 15 oz. Can Chickpeas
  • 1 Onion I used a leek, but use any sweet onion, shallot or green onions.
  • 1 tsp Minced Garlic Or 1 to 2 garlic cloves.
  • 2 Tbsp Oil I used avocado oil, any oil will do. This is used to saute the vegetables.
  • Salt and Pepper to taste Or add any seasonings of choice.

Instructions
 

  • Drain and rinse the chickpeas, set aside.
  • Clean the spinach and onion, set aside.
  • Dice the onion, add to a large frying pan with oil and fry until soft, about 5 minutes.
  • Add garlic and cook for another minute.
  • In stages, add a little spinach slowly, stirring until the leaves begin to wilt.
  • After all the spinach has been added, stir in the chickpeas and seasonings.
  • Heat until the chickpeas are hot.
  • Serve hot as a main dish or as a side dish.

  • Curry Seasonings - turmeric, coriander, ginger, paprika, cumin.
  • Hot Spices - Cayenne, crushed red pepper, chili powder.
