Sauteed Spinach and Chickpeas

This dish is so easy to make, use simple ingredients, full of flavor and a inexpensive dish. Make this dish as a main meal or as a side dish.

- 10 oz. Fresh Spinach
- 1 15 oz. Can Chickpeas
- 1 Onion I used a leek, but use any sweet onion, shallot or green onions.
- 1 tsp Minced Garlic Or 1 to 2 garlic cloves.
- 2 Tbsp Oil I used avocado oil, any oil will do. This is used to saute the vegetables.
- Salt and Pepper to taste Or add any seasonings of choice.
Drain and rinse the chickpeas, set aside.
Clean the spinach and onion, set aside.
Dice the onion, add to a large frying pan with oil and fry until soft, about 5 minutes.
Add garlic and cook for another minute.
In stages, add a little spinach slowly, stirring until the leaves begin to wilt.
After all the spinach has been added, stir in the chickpeas and seasonings.
Heat until the chickpeas are hot.
Serve hot as a main dish or as a side dish.
