Method
- Clean and dice the peaches, avocado, tomatoes, peppers, cilantro, and onions.
- Combine all of the diced produce to a medium sized bowl and gently mix.
Making the dressing
- In a small bowl or jar, whisk together the oil, balsamic vinegar, salt, pepper, lemon, and lime juice.
- Pour the dressing over the freshly cut vegetables, and gently mix until everything is covered with the dressing.
- Place into a refrigerator for about an hour before serving.
- Serve as a dip with chips or crackers.
