Peach Salsa

This refreshing salsa has the sweet tangy flavor of the peaches, the buttery flavor of the avocado, and the bright freshness of the cilantro.

Ingredients
  

  • 2 Peaches
  • 2 Tomatoes I used roma tomatoes in my salsa. You can also use a grape sized tomatoes.
  • 1 or 2 Sweet Peppers I have used 1 sweet bell peppers or 2 small sweet peppers. The best colors I like to use are red, orange, or yellow.
  • 1 to 2 Onion Use green onions, shallots, or 1/4th of a sweet onion. I will sometimes use 1/4 tsp of onion powder.
  • 1 Avocado
  • 2 Tbsp Fresh Cilantro
Salsa Dressing
  • 1 Tbsp Oil I used avocado oil in my dressing.
  • 1 Tbsp Balsamic Vinegar
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Lime Juice
  • Salt and Pepper to taste

Method
 

  1. Clean and dice the peaches, avocado, tomatoes, peppers, cilantro, and onions.
  2. Combine all of the diced produce to a medium sized bowl and gently mix.
Making the dressing
  1. In a small bowl or jar, whisk together the oil, balsamic vinegar, salt, pepper, lemon, and lime juice.
  2. Pour the dressing over the freshly cut vegetables, and gently mix until everything is covered with the dressing.
  3. Place into a refrigerator for about an hour before serving.
  4. Serve as a dip with chips or crackers.
