Mint Fruit Salad

The salad is easily customizable with your own favorite fruits, not to mention so easy to whip together in just a few minutes.

Ingredients
  

  • 1/2 to 1 Cantaloupe 1/2 of a cantaloupe if adding honeydew.
  • 1/2 Honeydew Optional.
  • 1 Pint Fresh Strawberries
  • 1/2 Cup Fresh Blueberries
  • 1/4 Cup Blackberries
  • 1 10.7 oz. Can Mandarin Oranges
  • 2 Tbsp Fresh Mint Any variety of mint can be used, use your favorite.
  • 3 Tbsp Lime Juice Can be substituted with lemon juice.
  • 2 Tbsp Real Maple Syrup
  • 3 Tbsp Juice from the Mandarin Oranges. Keep the rest for another recipe.

Method
 

  1. Clean and cut the cantaloupe (and honeydew) into bite sized pieces, and place into a large serving bowl.
  2. Next clean, hull, and slice the strawberries into half, add to the bowl of melon.
  3. Wash the blackberries and blueberries, add them to the bowl.
  4. Open the mandarin oranges and drain the juice into a cup, saving for the dressing.
  5. Clean and chop the fresh mint, add to the bowl of fruit.
  6. Continue by adding the maple syrup, lime juice, and some of the mandarin juice to the bowl.
  7. Toss everything together.
  8. Place the bowl into the refrigerator for an hour or more before serving.
  9. Stir and serve cold.
