Baked Tofu in Peanut Sauce

Ingredients
  

The Tofu.

  • 2 Blocks Regular Extra Firm Tofu
  • 1/2 Cup Unsweetened Plain Almond Milk
  • 1/4 Cup Corn Flour (Masa Harina)
  • 1/4 Cup White Rice Flour
  • Salt and Pepper to taste.
  • Avocado Oil To be drizzled over the tofu before baking.

The Peanut Sauce

  • 1 Cup Unsweetened Plain Almond Milk
  • 1 tsp Minced Garlic
  • 1 Tbsp Lime Juice
  • 3 Tbsp Soy Sauce
  • 2 Tbsp Real Maple Syrup
  • 1/2 Cup Smooth Peanut Butter
  • 1 tsp Sesame Oil
  • Salt and Pepper to taste
  • 1 Yellow Bell Pepper
  • 1/4 Cup Green Onions
  • Avocado Oil To saute the vegetables and tofu.

Instructions
 

Prepping the tofu

  • Drain and wrap the tofu into a towel.
  • Let the tofu drain for up to 30 minutes.
  • Preheat oven to 375° F.
  • Prepare 2 baking sheets with parchment paper and set aside.
  • After the tofu has drained, slice the tofu into small bite sized squares, set aside.
  • Add into one bowl, the corn flour, rice flour and in the second bowl, almond milk.
  • Place the small pieces of tofu into the almond milk, and then into the flour bowl, making sure to cover each piece completely.
  • Remove the pieces from the bowl and place them onto the parchment covered baking sheet.
  • Continue until all the pieces of tofu are covered.
  • Lightly drizzle avocado oil over all the tofu pieces.
  • Place into the oven for 15 minutes, flip the pieces and place the tofu back into the oven for another 15 minutes, or until the pieces are slightly browned.

The Peanut Sauce

  • In a 2 cup measuring cup, add all the sauce ingredients, mix well, and set aside.

Finishing the dish

  • Clean and slice the green onion and yellow bell pepper.
  • On a medium heat in a large skillet, add the oil, onion and bell pepper.
  • Saute the vegetables for about 7 minutes or until slightly browned.
  • Add the baked tofu and saute for a few minutes.
  • Pour the peanut sauce over the tofu and continue cooking for 10 minutes.
  • Remove from heat and serve.

How to serve this Baked Tofu in Peanut Sauce

  • One of the most common ways to enjoy this dish is on top of your favorite rice.
  • Another way to enjoy this dish is on top of rice noodles or your favorite pasta.
  • Or add the baked tofu in peanut sauce on top of your favorite steamed vegetables.
  • Finish by topping with a few crushed or whole peanuts and enjoy!
