You don’t have to be a vegan to enjoy this Vegan/Vegetarian Mushroom Reuben.

If you are checking out this recipe, than I would assume that you love a good grilled sandwich, just as much as I do.

The ooey gooey cheese melting over the sides of slightly toasted crisp bread complimenting the sandwich’s filling.

Being that I am a huge mushroom fan, the mushrooms are what make this sandwich so satisfying and flavorful.

And why use mushrooms for this reuben?

Well because mushrooms are an excellent meat substitute for most vegans.

The texture and flavor can be similar to meat and they have a earthy, woody, or an umami flavor.

And because there are so many different varieties of mushrooms available, you can experiment each time you make this sandwich.

So don’t limit yourself to just one variety!

For this sandwich, I have used the portobello, shiitake, white button, and the crimini mushrooms and we loved every different variety.

When you use different varieties, they can bring a slightly different taste to your reuben.

As for adding cheese to this sandwich?

This can be a regular or vegan cheese, swiss is the best, but can be replaced with any white cheese.

Another option is to not add cheese, this is how I enjoy my reuben.

What ingredients needed for this sandwich

  • Bread – I used a homemade artisan bread, pick your favorite bread.
  • Oil – Olive oil was used to saute the mushrooms.
  • Seasoning – Optional. I like to add a little minced garlic and onion powder to my mushrooms while they saute.
  • Mushrooms – Any variety of a fresh mushroom will work for this sandwich. I have used portobello, shiitake, white button, and the crimini, but pick your favorite.
  • Margarine or Butter – A vegan butter or a real butter for the vegetarians.
  • Avocado – A fresh avocado gives this sandwich a creamy, earthy, and a slight buttery flavor.
  • Sauerkraut – Sauerkraut will give the sandwich a tangy, salty, and sour flavor that compliments the sauteed mushrooms wonderfully.
  • Cheese – The cheese can be a vegan or regular cheese. Swiss cheese is the preferred cheese when making a reuben, but this can be replaced with any white cheese just as well. Cheese is optional.
  • Thousand Island Dressing – Thousand island dressing is made with a mayonnaise base and finely chopped ingredients. Don’t waste your money on buying this dressing, when it is so easy to make at home! Try my Vegan Thousand Island Dressing!

How to make this Vegan/Vegetarian Mushroom Reuben

Prep work

Clean and slice up the fresh mushrooms.

In a medium sized frying pan (Use the same pan for grilling the sandwiches), add the oil and the fresh sliced mushrooms.

If adding seasoning, add to the pan and saute until the mushrooms are done to the desired tenderness or slightly browned.

When your mushrooms are done, scoop them into a bowl and set aside.

Slice the bread.

Butter one side of each bread.

On the opposite side, spread avocado.

Have all the ingredients ready for quick assembly: The jar of Sauerkraut ready to put on the sandwich, the cheese sliced and ready, the sauteed mushrooms set aside, and lastly the Vegan Thousand Island Dressing.

Assembling the Mushroom Reubens

In your frying pan, on medium heat, place the buttered side down in the pan with the avocado side facing up.

Now add your Cheese ( if you want ), then the sauteed Mushrooms, next the Sauerkraut and last the Vegan Thousand Island Dressing.

Place the other piece of bread on top with the buttered side up and cover the pan.

If you add cheese to the sandwich, it will be easy to see when to flip the sandwich, if no cheese, it is a little harder to know exactly when to flip. Just check to see how the other side is coming along for darkness.

Once the cheese starts to melt or the bottom side has browned, flip the sandwich.

Continue cooking until the sandwich has browned evenly.

Remove from the pan and continue with the next sandwich until all are done.

Plate the sandwich, cut in half, add a little dipping bowl of thousand island dressing along side your Vegan/Vegetarian Mushroom Reuben and serve.
