These Plum Crumble Bars are easy to make and full of that warming fall flavor!
It’s that time of year, the plums are ripe and ready to be enjoyed.
So why not make a crunchy, tart treat that says “FALL”!
This bar has a oat crust filled with a plum filling, and topped with an oatmeal crumble sprinkled on top.
A sweet and tart bar that is also gluten free and vegan.
You can enjoy these bars as a treat or they can be enjoyed as a fast breakfast.
Serve these bars warm or cold and top with your favorite ice cream or a whipped topping (try my homemade Whipped Coconut Cream).
Ingredient Notes for the Plum Crumble Bars
- Plums – Any plums will do. I used a home grown small purple tart plum for my recipe.
- Real Maple Syrup – Maple syrup was my sweetener of choice. Substitute with brown or white sugar.
- Cornstarch – Cornstarch is used to thicken the fruit filling. Substitute with tapioca flour.
- Oats – I used a regular rolled oat for the crust and crumble of the bars.
- Nut Butter – I used almond nut butter in the crust. You can substitute with any other nut butter, such as peanut, hazelnut, or even a sunflower butter.
- Flour – I wanted to keep this gluten free, so I used an almond flour. Substitute with regular white flour, or a gluten free flour.
- Brown Sugar – I used brown sugar in the crust. Can Substitute with white cane sugar.
- Oil – I have used avocado or olive oil for the crust. Any oil of your choice will work.
- Cinnamon – This warming spice adds just the right amount of fall flavor to the bar.
How to make the Plum Crumble Bars
The filling
Cut the plums in half and remove the pit.
Continue by cutting the plums into smaller pieces, set aside.
In a medium large skillet on medium heat, add a little oil and the diced plums, and saute them until they start to fall apart.
Next add the maple syrup, cornstarch, a little water, and continue to cook until thickened.
Remove from heat and set aside.
The Crust and Crumble for the Plum Crumble Bars
Preheat the oven to 375° F.
Prepare a 8 x 8 glass baking dish with parchment paper.
Add the oats to a food processor and pulse until it becomes an oat flour.
Next add the nut butter, oil, sugar, almond flour, and cinnamon.
Blend everything together in the food processor until the crust/crumble is slightly sticky but also a little crumbly.
Pour half of the crust into the parchment lined baking dish and press the dough evenly into the dish.
Next pour the fruit filling over the crust, spreading out evenly.
Continue by crumbling the left over crust on the top.
Place the bars into the oven, and bake for about 40 minutes.
You will notice the crust slightly turning brown.
Leave the bars to cool before cutting into.
Once cut, serve the bars with ice cream or a little whipped cream, and Enjoy!
