How to make a Customizable Vegan Chili

This vegan chili is easy, simple and budget friendly! You can customize to your liking.

Saute these ingredients together
- 1 8 oz. tub Fresh Mushrooms cleaned and sliced.
- 1 small Onion diced or 1 Tbsp onion powder.
- 1 Tbsp. Olive Oil
- 2 tsp. minced Garlic
Drain and rinse, then add to your pot
- 1 can Black beans
- 1 can Kidney beans
Then add
- 1 can Diced Tomatoes Or you can use 3 to 4 fresh Tomatoes.
- 1 can Corn or 1/2 package frozen Corn.
- 1/8 cup sliced Black Olives
- 1/8 cup sliced Green Olives
- 1 tsp chili powder add more or less to your taste
- 1 Tbsp Real Maple Syrup
- 1/2 cup Tomato sauce or pasta sauce
- Salt and Pepper to taste
Clean and chop the mushrooms, onions, and any other fresh vegetable's you would like to add to the chili.
In a medium sized stock pot, add olive oil and saute the mushrooms, onion and garlic together for about 7 to 10 minutes, or until desired tenderness.
Drain and Rinse the Kidney and Black Beans, add to the pot with the sauteed vegetables.
Continue by adding all the remaining ingredients to the pot.
Cook the chili at a medium high heat to a boil.
Then turn down to a medium/low heat and let simmer for about 10 minutes.
Remove from heat and serve hot.
Serve this chili with aioli, sour cream, fresh avocados, saltines, tortilla chips, or on a bed of rice.
This chili doesn't have to be served just as a meal, it also makes for a great appetizer, as a salsa.
